Heiko Antoniewicz inspires at the Hotel Victory Therme Erding
A workshop full of culinary discoveries
Hotel Victory Therme Erding welcomed a very special guest: Heiko Antoniewicz, who is known as the “flavor pope”, brought fresh inspiration and innovative concepts to the kitchen of the renowned hotel.
The workshop began with a fascinating presentation in which Antoniewicz revealed the art of food pairing, the importance of fermentation and the secrets of umami. With this newfound knowledge and full of enthusiasm and new ideas, we then went straight to the kitchen, where Antoniewicz surprised the participants with a selection of fermented foods and unknown ingredients. The tastings were the perfect start to the subsequent cooking session.
Dishes such as marinated salmon with cucumber and beetroot or sous-vide cooked veal shank with kohlrabi and jus were prepared together. The main aim of the workshop was to introduce participants to new preparation techniques and to motivate them through creative inspiration. Heiko Antoniewicz, who is known for his ability to explore new ways of combining flavors, immediately infected the participants with his enthusiasm and encouraged them to create their own new taste explosions in the future.
